No-Soak Black Bean Soup
Black Beans are full of nutrients including calcium, magnesium, iron and zinc which are important in maintaining bone strength. This soup is easy to make and you don't need to soak the black beans in advance.
Ingredients:
Soup:
2 cups dried black turtle beans
1 red onion, roughly chopped
1 red chili, roughly chopped
3 cloves of garlic, roughly chopped
1/2 tsp cumin powder
Salt and pepper to taste
Garnish:
Diced red onion
Coriander
Avocado slices
Method:
Add all soup ingredients to a large pan and cover with a few inches of water. Bring the water to a boil and then reduce to a simmer. Cover with a lid and leave the beans to slowly cook for 2.5-3 hours, until the beans are tender. Once cooked, blend and enjoy. Set aside 1 cup of the mixture and pulse or leave the beans whole to add some texture to the soup.
Garnish with a squeeze of a sprinkle of coriander, diced red onion and sliced avocado.
This recipe is fool proof and can be easily be made in a large batch and frozen.
