Peanut Butter and Ginger Fudge Bars
These are the easiest snacks to make. They are so delicious and don't require any baking.
Ingredients:
1 cup smooth peanut butter
¼ cup agave nectar
1 tbsp ground cinnamon
pinch of salt
1 ¼ cup of rolled oats
210g tin condensed coconut milk
1/2 tbsp coconut oil
100g [1 large bar] 85% dark chocolate
1 tbsp ground ginger
Method:
Melt the peanut butter and agave over a double boiler for a couple of minutes.
Remove the bowl from the heat and add the oats, cinnamon and salt into the peanut butter mixture, stir and press firmly into a parchment lined brownie tray. Put this in the fridge to set up whilst you make the fudge.
Over a double boiler melt the chocolate, condensed coconut, coconut oil, ginger and a large pinch of salt. Once the mixture has come together and the chocolate is all melted, spread the fudge over the peanut base.
Let the bars set up in the fridge for a couple of hours then chop and enjoy.
