Chia and Flax Energy Bars
These energy bars are super easy to make and really delicious. The chia and flax seeds are both full of the omega-3 fatty acid, alpha-linolenic acid (ALA), which has a range of great health benefits including the prevention of heart disease and lowering blood pressure.
Ingredients:
2 cups of dates
2 tbsp water
1 cup cashew nuts
1 cup pecan nuts
1/4 cup almond butter
1/4 cup chia seeds
1/4 cup flax seeds
Pinch of salt
1/2 tsp pure vanilla extract
Method:
Blend the dates in a food processor with the water and blend until it forms a paste. If your dates are hard, soak them in hot water for 10 minutes before draining and blending.
Remove the dates from the food processor. Add the nuts and blend until they form a sand-like consistency. Add the dates back into the food processor and blend until combined. Add in the almond butter, salt and vanilla extract, blend until it is a smooth paste. If still a little thick, add more almond butter or water. Add the chia and flax seeds and pulse until well combined.
Press the mixture into a 12" x 8" baking tray and set in the fridge for an hour or so then chop and enjoy. Store for up to 2 weeks in an air tight container in the fridge.
